Weekly Cooking Tip:
Get the Perfect Sear – Preheat Your Pan First!
Whether you’re using a stainless steel or cast iron skillet, always allow your pan to heat fully before adding oil or food. Here’s why:
- A properly heated stainless steel pan creates a temporary non-stick surface, helping to prevent sticking and ensuring even cooking. It’s ideal for getting that golden crust on chicken or fish.
- A cast iron pan, once hot, holds heat like a champ great for steaks, cornbread, or crisping skin-on meats.
To test: sprinkle a few drops of water into the pan. If they sizzle and “dance,” it’s ready. Add your oil, then your food and don’t move it too soon. Let it form a crust and release naturally.
Chef Shanna’s Pro Tip: Resist the urge to overcrowd your pan. It lowers the temperature and causes steaming instead of searing.
