When Flavors Have Time to Settle In

Have you ever opened the refrigerator the next day, warmed up last night’s dinner, took a bite and thought, “Now why does this taste even better today?”
You’re not imagining it.
Certain foods really can taste better after they’ve had some time to rest. Think stews, curries, soups, braised meats, pasta sauces, and even some of your favorite Caribbean dishes. While everything sits together, the flavors have more time to mingle, settle, and become part of the entire dish.

Chef Shanna’s Kitchen Tips
Give those flavors some time:
When a dish contains several seasonings, herbs, aromatics, sauces, and slow cooked components, the flavor you taste immediately after cooking may not be exactly the flavor you experience the next day. As everything rests together, those bold individual notes can begin to taste more blended and balanced. Saucy dishes are especially good at this.

Ever notice how gravy, curry, stew, or a rich sauce seems to taste deeper the next day? As the food rests, the meat and other components continue sitting in all that goodness. Once reheated, you get those flavors working together again instead of tasting like separate parts of the dish.

But reheating matters!

Don't ruin a good leftover by blasting it with heat. Reheat slowly when possible, especially with meats and dishes containing thick sauces. Add a small splash of water, broth, or sauce if something has thickened too much overnight. The goal is to bring back the moisture without watering down the flavor. And always taste again.

After reheating, give your food a taste before serving. It may need absolutely nothing, or a small finishing touch might wake everything back up.

The Next Day Test
Some foods are meant to be enjoyed immediately, but others almost reward you for waiting. So the next time you make a big pot of curry, stew, soup, or sauce, don't be disappointed when there's some left over. Pack it up properly, refrigerate it safely, and tomorrow's lunch might have a little surprise waiting for you.
